Tagaro Lunario Fiano (2025) 12.0 IGP Puglia Tagaro 75CL
Vinification: Destemming of grapes and decrease of temperature at 6°/8° and maceration for 12 hours, soft pressing of grape, static decanting of the must and alcoholic fermentation at controlled temperatureof 16°/18° C
Ageing: At the end of fermentation it is separated from the crude sediment and it ages on the fine sediment for 3 months, then it is stabilised and bottled. Ageing in bottle for 30-40 days.
Masseria Tagaro is a family-run estate that combines tradition with modern winemaking techniques. The vineyards are located in the characteristic Itria Valley, known for its typical calcareous soils of Puglia. The winery works with indigenous grape varieties (such as Negroamaro and Susumaniello) that are deeply rooted in the identity of the region. The vinification contains partial removal of the must after a few hours of maceration (skin contact), followed by fermentation as for a white wine.
