Santa Ana Gin is inspired by the dancehall days of Manila in the 1920s and its crown jewel, the legendary Santa Ana Cabaret.
The Philippine Four—local botanicals Ylang-Ylang, Alpinia, Calamansi, and Dalandan—were the key inspirations behind Santa Ana Gin, helping to create this truly unique spirit. This recipe combines four traditional Filipino botanicals with seven classic gin botanicals to craft a surprising and harmonious gin. The floral notes of Ylang-Ylang and the citrus tones of Calamansi and Dalandan balance perfectly with the traditional juniper base, giving Santa Ana Gin its authentic Filipino character.
Santa Ana Gin is produced using a partial vacuum distillation technique, which removes most of the air from the pot, allowing distillation at a lower temperature (between 50°C and 60°C). This process ensures that the delicate aromas are extracted without heat damage, enhancing the complexity and depth of the perfumes as the distillation progresses.
Botanicals: Juniper, coriander, lemon, bitter orange, angelica, and orris root—combined with the perfumed qualities of Ylang-Ylang, Alpinia, and fennel, along with the sweet citrus tones of Calamansi and Dalandan.
