Ironroot Republic Rye - Ironroot Assemblage - Blend of Straight Rye Whiskeys [Official Bottling] Bottled 2025 - Double Barreled, European Oak Maturation & European Oak Finish - 48.0% abv.

The Likarish family philosophy is heavily influenced by the history of our Texas town, Denison, where local viticulturist T.V. Munson helped save the French wine industry from destruction with his Texas “iron” grape roots. His efforts forever linked Denison to Cognac, France and inspired us to learn brandy distilling techniques. We apply those French traditions to Texas heirloom corn to make some darn good whiskey.

Nose: Those warming spices alongside hints of old cedar and teak wood really do it for me. Very comforting. There’s a sliver of varnish too, as well as surprising cotton candy note. Then onwards to a whiff of aniseed, orange zest and grilled pineapple. Some cinnamon as well. The vanilla notes keep growing.

Taste: Buttery mouthfeel but a pleasantly spicy arrival. Slightly dry. A touch of pepper, some allspice and nutmeg too, but cinnamon is leading the pack. Also slivers of chocolate, roasted almonds and a delicate mead-like note, alongside sweeter, fruity elements.

Finish: Medium length. A hint of coffee grounds, lychee and mint.
