Holyrood Noir Burgundy Yeast [Official Bottling] Bottled 2025 - Ex-Bourbon Casks & Burgundy Barrique - 47.4% abv.

Holyrood distillery is known for its experimental mindset and flavour-first approach. They’ve just presented the Holyrood Noir trilogy: three whiskies made with wine yeasts from iconic regions, each matured in a corresponding cask.

Nose: intruiging. It’s vinous but there’s also a lovely hint of oak polish and even a volatile whiff of oil paint. Then hints of cinnamon and pomegranate syrup, as well as a little Kriek beer and raspberry jam. Blackberry tartlets. Subtle umami notes and nuts in the background too.

Mouth: again not your usual wine cask. There’s bright raspberry and blackcurrant at first, with a round vanilla note. Great onset, but mid-palate it becomes a bit more tangy, with clove and a brandy-like edge. Underneath there are malty notes and hints of toast.

Finish: medium, with lingering dark fruits and brown sugar.

Yes, this is a red wine cask, and there’s still this vinous side to it. But it may well be the first whisky from a red wine cask that I would considering buying. Now I like Pinot Noir and this has some of these elements – it’s fairly unique. Interesting series,

PRE-ORDER TERMS & CONDITIONS

Pre-orders are orders for products that are not yet available in our own warehouse but are already being offered by our suppliers. By enabling pre-orders, Tensu offers customers the opportunity to reserve limited and/or small-batch bottlings before the official sale has commenced.

Once the pre-ordered product is in stock and payment has been received in full, Tensu will proceed with collection or delivery of the product. When placing a pre-order, the full purchase price must be paid in advance. Pre-orders cannot be cancelled after payment, unless a waiting list exists and the reservation can be resold.

Pre-order payments do not guarantee product availability, but represent the customer’s offer to purchase the product once it becomes generally available for sale. Release dates are subject to change. Consequently, Tensu cannot be held liable for any changes to release dates communicated by us.

In the event that available supply is insufficient to fulfil all pre-orders, the first-come, first-served principle applies. Customers whose pre-orders cannot be fulfilled will receive a full refund of the amount paid.
