Ierland heeft een lange geschiedenis van distilleren - langer dan die van Schotland, zouden sommigen beweren. Het aantal distilleerderijen - zowel nieuw als oud - is de afgelopen jaren weer toegenomen. Deze klassieke Ierse single malt is afkomstig van Cooley in Dundalk. De neus is fris en knapperig, met sappige appel, terwijl kruidige vanille-tonen naar voren komen uit de eik. De smaak is olieachtig, met een broze beet van appelzuur, wat levendigheid geeft.
